Regarding the cayenne...our local gourmet ice cream place (it was on Food Tv with Bobby Flay once) has a flavor called hot brown sugar - they add carmelized pecans with cayenne on them to it - it's really great! The only bad part is, when it hits the back of my mouth it makes me cough. I'm not sure hot I'd do with it in a drink.... Yum!
